Eat the rainbow

As developing countries improve their standard of living and begin to incorporate more animal products into their diets, their cancer rates begin to go up. What does this mean to you? No brainer, right? Eat more NON-animal products in your diet! Yes, whole grains can be a part of a nutritious diet. Although some folks want to eat only raw foods, you don’t need to commit to such a diet. Just incorporate more vegetables – raw, steamed, sautéed, in soup, however you want – every day. As celebrated author Michael Pollen says, “Eat food. Not too much. Mostly plants” and “Don’t eat anything your great-grandmother wouldn’t recognize as food.”

Try to eat the rainbow everyday: reds, oranges, yellows, purples, greens and, when blueberries are available, blues. (Are there any other blue fruits or veggies? I can’t think of any.) You can eat a rainbow daily by eating primarily vegetables with a bit of fruit. Not only will eating the rainbow allow you to take in the essential phytonutrients contained in the whole vegetables and fruit, it will allow you to take in fewer calories. Double benefit, right? Just remember, raw leafy greens are the most nutrient dense.

Joel Fuhrman, promoter of what he calls the “Nutritarian” diet proposes a great acronym to help us remember which foods are the most nutrient dense so that we can remember to include them in our diets. Just remember G-BOMBS (Greens, Beans, Onions, Mushrooms, Berries, Seeds)

For many years, I suffered from what was labeled depression. Then for several years, I REALLY began to notice increasing brain-fog and difficulty focusing while at work. Since I’ve been eating more plant based foods and fewer processed, refined foods it’s like the sunroof in the crown of my head has opened up. It’s a new day! The fog has cleared and I don’t feel that feeling that I associated with depression any more. Another benefit is that the more you include nutrient dense foods, the less you will crave things like refined sugar.

    I think that covers the rainbow :-).
